Pretty simple, right?!

Now, I tend to go with the storebought gnocchi since it's more convenient, but if you want to make homemade gnocchi, you certainly can.

As for the chicken, any leftover cooked chicken will work just fine. My favorite thing to use is a leftover rotisserie chicken for it.

By the way, if you're looking for another recipe that uses many of these same ingredients, this Chili's Southwest chicken soup recipe does just that!

HOW TO MAKE OLIVE GARDEN CHICKEN GNOCCHI SOUP

As I mentioned earlier, making this copycat Olive Garden chicken gnocchi soup recipe is about as easy as it gets. I mean it comes together in 30 minutes and just one pot.

So, with that said, let's get to cooking!

STEP 1: COOK THE VEGGIES

First, heat a little olive oil in a large soup pot set over medium heat. When the pot is hot, add the celery, onions, garlic, and carrots. Sauté the veggies for 2-3 minutes or until the onions are translucent.

STEP 2: ADD THE CHICKEN AND THE GNOCCHI

Then, after you've sautéed the veggies, you can add the cooked chicken, chicken broth, salt, pepper, and thyme.

Bring this to a boil, then gently stir in the potato gnocchi and let it boil for 3-4 minutes. Now you can reduce the heat to a simmer and continue cooking the soup for 10 more minutes.

STEP 3: FINISH THE SOUP AND SERVE

To finish the soup you'll just want to stir in the half and half and the spinach. Let this cook for another 1-2 minutes until the spinach is warm and tender. Then, give the soup a taste and adjust the salt and pepper if needed.

Finally, once the soup has been seasoned to suit your preference, you can serve it warm. Enjoy!

HOW TO STORE ANFD REHEAT THE GNOCCHI SOUP

This recipe for Olive Garden chicken gnocchi soup makes 12 servings, so it's great for a hearty lunch or an easy-going family dinner.

If you end up with leftover soup, simply store it in an airtight container and keep it in the fridge for up to 2-3 days. Or, if you want the soup to last even longer you can freeze it in an airtight container for up to 3 months.

Then, when you're ready to enjoy your chicken gnocchi soup again, you'll definitely want to reheat it.

So, to reheat the soup, I suggest transferring the leftovers to a pot set over medium heat. Let the soup cook, stirring occasionally until it's fully reheated.

Alternatively, if you're short on time, you can microwave your leftovers in 20-second intervals until the soup reaches your desired temperature.
