These Crock Pot Bacon Wrapped Chicken Bites would be a show stopper at any shindig (aka get together for anyone who isn’t fluent in the “country dialect”). Better yet, they are so easy to make that you could easily make them up for a special treat at home too!

Ingredients for Crock Pot Bacon Wrapped Chicken Bites

  • 12 oz pkg bacon divided
  • 2 chicken breasts
  • 3/4 cup brown sugar packed

How to Make Bacon Wrapped Chicken Bites in a Crock Pot

  1. Cut your bacon slices in half, set aside
  2. Cut your chicken breasts into bite size pieces (I cut my chicken into 24 pieces because my pkg of bacon had 12 slices, which I cut in half, giving me 24 pieces of bacon to use)
  3. Wrap one half piece of bacon around a piece of chicken and place in the bottom of a 6-quart slow cooker (I used Cera, my 6 Quart Crock Pot with Ceramic Coated Pot). Repeat with all of your chicken and bacon pieces.
  4. Sprinkle your brown sugar evenly across the top of your bacon wrapped chicken bites.
  5. Cover and cook on low for 2-3 hours (use a meat thermometer to ensure that your chicken is cooked to the proper temperature without overcooking it)
  6. Place your bacon wrapped chicken on a foil lined baking pan, drizzle juices from crock pot over top of all of them and broil on high for 2-3 minutes, watching continually, to crisp up the bacon a bit

Crock Pot Bacon Wrapped Chicken Bites Notes:

  • You will want to line your baking sheet with foil for easy clean up when you are crisping up your bacon. Also, when you are using your broiler, I always recommend the “Pull up a chair and stare” method. If you take your eyes off of something in your broiler, it is very easy to go from oh yum to oh no. So just watch it closely.
  • As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and shouldalways be tested first in your own slow cooker and time adjusted as needed.

    I have not made these…yet, but I am definitely going to!! Our church has a potluck first Sunday of every month, so I will be at least doubling the recipe. For a dipping sauce, I think I will thicken the sauce left over in the crockpot after broiling the chicken, maybe adding a bit of pepper flakes to it for some heat. I cannot wait to try these!!!

      I haven’t tried doubling this recipe. If I did try doubling, I would do it in layers. So, I would put one batch of bacon wrapped chicken pieces in the bottom of the crock pot and top with the brown sugar, and then I would repeat with the second batch. That way the brown sugar can get to all of the chicken bites. I would guess that the timing would change. So, you will want to watch it closely and allow for more time, if it is needed. Be sure to use a meat thermometer to know exactly when they reach at least 165 degrees Fahrenheit. If you give it a try, let me know how it goes.

      Do you have an oven you could use to crisp up the bacon? I haven’t tried just using a high heat in an oven to crisp up the bacon, but think it could work, it would just take a little longer. Hope this helps!

    Assigned the main dish for my sons wrestling meet for the second week in a row I was looking for something different. Every week it’s sloppy joes or tacos, because inevitably we’re there all day and it has to be in a crockpot. This was an absolute hit. Both coaches placed a standing order for it every week. The only thing I did different was I ran out of bacon with a little leftover chicken so I threw it on the top, but did not broil those pieces. After broiling I threw it all back in the crockpot and added a few squirts of bbq sauce in layers. It was the first crockpot empty that day.

      I used regular bacon. When I placed the bacon wrapped chicken in the crock pot, I made sure the end of the bacon was down so the chicken would hold it in place while it cooked. Enjoy!
