This is the BEST keto grilled cheese sandwich I’ve ever made – and I’ve made it with many low carb bread recipes, but seriously, the version with my keto bread mix beats them all. 😉 Two slices of this fluffy, chewy white bread are toasted around a melty layer of cheddar cheese, giving this dish total comfort food flavor without the carbs.

It’s a filling meal, so I like to serve the low carb grilled cheese with raw keto veggies or keto tomato soup for a classic flavor pairing.

If you thought a keto lifestyle meant you would have to say goodbye to your favorite sandwiches, think again! Recipes like this will show you how easy it is to swap your favorite meals with keto ones. Whatever your favorite sandwich, you can make it with my keto bread mix!

How To Make Keto Grilled Cheese

This keto grilled cheese recipe comes together in a few simple steps. I’ll walk you through using my mix to make the keto bread for grilled cheese, as well as the grilled cheese method itself.

Make the low carb bread for grilled cheese

  • Prep. Preheat the oven and line a loaf pan with parchment paper. Gather the ingredients you’ll need: Wholesome Yum Keto Bread Mix, butter, eggs, and milk of your choice (see notes on the milk options 2 steps down.)

  • Cream butter. You can use a hand mixer or stand mixer to beat the butter – do so until it’s pale and super fluffy. This helps create air pockets in the bread later on.

  • Add eggs and milk. Make sure they are room temp so that they don’t solidify the butter. I used unsweetened almond milk, but any kind of keto friendly milk will work.

Keto Grilled Cheese Sandwich FAQs

How many carbs in a grilled cheese sandwich?

The carbs in grilled cheese sandwiches will vary, depending on what type of bread and cheese you use. The average grilled cheese will have around 500 calories and over 30 total carbs. When using white bread, net carbs are almost just as high, since white bread doesn’t have much fiber.

In this keto grilled cheese recipe, the calories are a little higher as the bread is made with nutrient-dense almond flour… and the carbs are much, much lower. Just 4.9 grams net carbs for the whole sandwich!

Can you make this with other bread?

Yes, you can. My keto bread mix is by far the easiest and most delicious bread for grilled cheese I’ve ever used, but you can swap out one of my otherketo bread recipes if you like. These are popular:

  • Almond Flour Bread
  • Keto Flaxseed Bread
  • Keto Coconut Flour Bread – For a nut-free option
  • 90-Second Bread – A quick microwave option

Can I use a different cheese?

Sure! Feel free to use any cheese you like – check the keto cheese list for lots of options.

TIP: As a rule of thumb, you’ll need approximately 1/2 cup shredded cheese, or 2 ounces either shredded or sliced. This applies with virtually any kind of cheese you’d use for grilled cheese.

Low Carb Grilled Cheese Storage Instructions

Can you make it ahead?

Grilled cheese is best served right after it’s done cooking, but feel free to make the bread up to a week in advance. Then it will just take a few minutes to assemble and cook.

However, if you do have leftovers, you can still enjoy them later.

How to store a keto grilled cheese sandwich:

Store any leftover sandwiches in the fridge for 3-4 days.

Can grilled cheese be reheated?

Yes! For best results, reheat the sandwich in a warm skillet until heated through. (You’ll want to keep the heat on low to avoid darkening the bread too much if it was previously grilled.) Reheating in the microwave will result in a mushy sandwich.

FAQs

What can I add to grilled cheese to make it better? ›

Tuck in a little sautéed spinach, caramelized onions, chopped steamed broccoli, roasted red peppers, or roasted tomatoes. Add fruit. For really gourmet grilled cheese sandwiches, use a mix of Gruyere and brie cheese along with thinly sliced apples or a slather of fig jam. Pickles, please!

What is the best bread for grilled cheese? ›

Sourdough bread is a great choice to add a little tang to your grilled cheese. The slightly sharp flavor of sourdough is a great contrast to the richness of the cheese and butter in the sandwich. Look for a loaf with a uniform texture, as the large holes in a rustic loaf may allow melty cheese to leak out.

What is the best melting cheese for grilled cheese? ›

Comté/Raclette/Gruyère

(Raclette actually comes from the French verb “racler” which means “to scrape.”) These are also the cheeses used for fondues and French onion soups, so it follows that they are also some of the best options for gooey grilled cheese sandwiches.

What kind of butter is best for grilled cheese? ›

For good measure: While most recipes today call for unsalted butter, often so the cook can control the amount of salt in the recipe, the grilled cheese sandwich is clearly one place where salted butter belongs. It adds more flavor and helps turn the bread more deeply golden.

How many slices of cheese do you need for grilled cheese? ›

For each grilled cheese, you'll need two slices of bread, at least 1 tablespoon of butter, and 2-4 slices of cheese (depending how gooey you like it). American, Cheddar, Swiss, muenster or Gouda all work well—feel free to mix and match your cheeses.

Is Miracle Whip a mayonnaise? ›

Mayonnaise is made of oil, eggs, and vinegar (or lemon juice). Miracle Whip has the same basic ingredients but with less oil, and the addition of water, sugar, and spices like mustard, paprika, and garlic. Even with these additions, Miracle Whip has almost half the calories of mayo and half the fat.

What 2 cheeses go well together for grilled cheese? ›

Sharp cheddar, Gouda, Fontina, Monterey Jack, Gruyere, Pepper Jack, and brie are all good options. The amount of cheese you use will depend on the size of your bread. I love sharp Cheddar, Monterey Jack, and Gouda together.

How do you amplify grilled cheese? ›

Crisp bacon, thinly sliced apple, caramelized onion, prosciutto, jam, roasted tomatoes, fresh herbs... there are tons of ingredients out there that can add sweet or salty (or both!) flavor to a grilled cheese sandwich.

What seasoning should I put on grilled cheese? ›

Sprinkle parsley, basil, oregano, rosemary, and dill over the cheese; top with remaining bread. Spread the top of sandwich with 1 tablespoon butter. Heat a skillet over medium heat. Gently flip sandwich, buttered-side down, into the hot skillet; spread remaining 1 tablespoon butter on the top.

Should I toast my bread before making grilled cheese? ›

For the best results, toast your bread first. A quick toast will help your bread develop the golden edges and luscious crisp that you're after. It'll also help prevent the bread from getting soggy, no matter how many fillings you add.

Is Velveeta cheese good for grilled cheese? ›

Velveeta's pristine ooziness and effortless melt-ability is exactly what I want in a grilled cheese.

How to make grilled cheese Martha Stewart? ›

Divide cheese evenly on both slices. Top with remaining slices, buttered side up. Heat a large skillet over low heat until warm. Add sandwiches and cover; cook, turning once with a spatula, until the bread is golden-brown and the cheese has just melted, 5 to 8 minutes per side.

Is grilled cheese better with butter or mayo? ›

Butter goes in the pan not on the bread. To ensure golden (not burned) toastiness, the exterior of the sandwich should be slicked with mayonnaise, which has a higher smoke point and possesses the combined browning power of oil and egg yolks.
